Spring 2021

create community, one bite at a time.

These days we’re all home cooks, and the best part is learning new recipes and exchanging ideas about how we can make our kitchen lives a little easier, a little more fun. What is even more rewarding is that we are able to share these cooking adventures together from our own homes. So whether you’re new to the Academy or already enrolled: Welcome! Your Neighborhood Starts Here...

Spring Semester runs March 10th through April 20th with a curriculum of three different six-week lessons and a mini crash course for Easter.

Going Global Tuesdays - 10:00 AM EST*

This series is all about bite-sized foods from different parts of the world, taught by home cooks who have perfected their international specialties.

The best cooking doesn’t just give us a familiar feeling; it can also provide a new experience as we expand our recipe repertoires to reflect the evolution of our culinary culture.

Fundamentals of Entertaining: It’s Not What You Think - Wednesdays 2:00 PM EST

Entertaining at home is so much more that which fork goes where.

Having the confidence to make any menu plan come together and the ability to make people comfortable in your home is what real entertaining is all about. Learn it, and your kitchen life will never be the same.

Hometown Cooking, Charleston Style - Thursdays 2:00 PM EST

Every hometown has its special dishes, those heritage recipes that reflect regional history and culture.

My hometown of Charleston has so many significant historical dishes that we have become an important destination for food travelers. Until the time you can visit, learn how to create these Low Country classics and hear the fascinating stories behind them.

Easter Mini Series - March 29-31 (class times vary)

We love holidays at the Academy so here are three gems celebrating all things Spring!

Sign up for one class, book a bundle of three or six. Classes are held remotely in small groups via Zoom. (Gift a class to a loved one far away so you can share the experience together!) You will receive a link to join, as well as recipe, ingredient and equipment list after registering HERE.

Our hands-on, live instruction helps you acquire each skill with confidence, relying on Suzanne’s thirty plus years of experience as a professional educator. Additionally, we are pleased to welcome back our fabulous guest instructors, plus a few new faces:

Victoria de la Maza was born and raised on a cortijo near Seville, where her family hosted the King of Spain’s eldest daughter’s bridal party for 700. Victoria is an award-winning cookbook author, columnist, and international TV host.

Youmna Squalli was born and raised in Tripoli, Lebanon. She lived in Dubai for over eight years and married a Moroccan husband, influencing her passion for cooking delicious recipes that feed your soul.

Celeste Neuhoff is a home cook who, thanks to her mother and grandmothers, is totally food obsessed. Celeste lives in Orange County, California.

Carlye Jane Dougherty is the founder of Heirloom Book Company. She has over fifteen years of experience in the creative & marketing industries. She's also a great cook & a fantastic hostess!

Susan Massamillo comes from a background in fashion at Ralph Lauren in NYC, interior design and landscaping. Her home garden is currently on tour through Charleston’s Horticultural Society and Garden Club, as well as featured on the BBC Special “Gardens of America”.

Georgia Garrett graduated from the CIA in Hyde Park with a concentration in Baking. Fifteen years in the food & beverage industry makes her a multi-faceted professional specializing in pastry and fine wine.

Testimonials

My first week was outstanding. I really enjoyed it because the one hour gave me a soothing distraction from Covid and confidence that we will return to being able to celebrate lovely dinners with friends and family. Your enthusiasm is contagious.
The cassoulet was a big hit! So much fun to cook and serve...my friends were impressed!
Amazing fun to be with so many interesting people from all over…equally amazing to enjoy the process with anticipation for my executing later when my schedule is not slammed...
It was a momentous hour. I learned SO much. I have never poached a whole chicken and I can’t believe the flavor of the broth after only an hour. Pulling the meat off the bones feels like what a ‘real chef’ does!
Thank you for another fabulous class. I am really loving learning how to cook like a chef. We had the gumbo for dinner and it was DELICIOUS. I can’t wait for Covid to pass so I can have a dinner party and serve this. Both you and your classes are AMAZING. I don’t know if I enjoy your personality or the class itself more.
Suzanne did a great job making us feel welcomed and kept us entertained with lots of hands-on activities. It was great to have a virtual gathering and to participate in something together from the comfort of our own kitchens again.
My husband wondered if we were having shepherd’s pie for lunch and was VERY disappointed to learn he had to wait for dinner! I will take a picture tonight before we dig in. What a treat! My new favorite dishes of all time are pear pie, peach pie, gumbo, butter biscuits, and shepherd’s pie. I am ready to add fish chowder to the list...

How do remote cooking classes work?

The past year made it so hard to connect with friends, family and new people — not to mention new skills! The Academy responded by designing remote Zoom classes that work just like any cooking class, except ours can be taken from the comfort of your own kitchen. Classes are limited in size and Suzanne checks progress to make sure everyone stays on track. The other benefit is that unlike many live cooking classes, the Dean won’t be there to fix your mistakes for you. The Academy is proud of its philosophy that the best way to learn is by doing. For more specific questions on courses or format, contact us.

Can I take my class with a friend?

Yes! We know that cooking together is one of life’s greatest joys. The Academy is happy to have your friends, family or guests join you on your screen, but we ask that you respect Zoom and classroom etiquette when doing so. That means keeping yourselves on mute while Suzanne is instructing and nominating one person in your group to ask questions.

Are there any prerequisites needed to take this course?

Absolutely not! These courses are for all skill levels — you don’t need to know anything at all to start learning how to cook or entertain.
